1. Use Plenty of Water

Once the water is boiling, add salt – and don’t be shy! Fresh pasta has a delicate flavour that’s elevated by well-salted water. Aim for about 1 tablespoon of salt per 4 litres of water. It should taste like a mild sea.


3. Cook for Just a Few Minutes

Drop the fresh pasta into the rolling boil and stir gently so it doesn’t stick. Fresh pasta cooks much faster than dried – usually 2 to 4 minutes depending on thickness and filling. Ravioli, girasoli, and stuffed pastas may take a little longer, but keep an eye on them.
